In terms of modern metal guitars I'd go with Arch Enemy War Eternal For drums I love the snare on devil driver Pray for Villains, and drums in general in that album sound huge.... Also any of the latest testament records are in your face clear mixes IMO and not forgetting endgame dat mix...

I think that got to do with Quad tracking, 1 hard pan at left 1 mid pan left 1 hard pan right, 1 mid pan right... but I'm no expert, so maybe I'm wrong

I recorded a song, that have that well how to explain it: chugga 1 bar, one bar of silence then again chugga 1 bar (core-ish) sound... to take the hum between the played parts... do I have to manually cut or there is a well easier method ? sorry if I can't explain it that well, maybe posting...
