Bathory (definitely pioneered the acoustic interludes and heavy/soft dynamics)
Possessed - Seven Churches (weren't Opeth a Possessed tribute band to start off with?)

I'd also say anything from Morbid Angel's Covenant could be pretty convincingly swapped with Master Apprentices (or at least the intro) with little to no discernable change.

Probably more, but, meh.

Ulver pretty mcuh went from a folk black metal band to a folk band then to a ultra raw black metal band and then to an ambient/electronic experimental act. They change alot, I like the new stuff
 
People think that "altars of madness" is the album to get since Mikael mentioned it...fact is, I'm sure they're influenced by that album in some way (it really is good)...but the riffs from Covenant and Domination are the riffs that inspired Master's Apprentices, A fair judgement (the end of it).

As for Bathory, I don't know how many of you like rawer more old school black metal...so we'll skip the first two albums right now. Get the subsequential 3..."under the sign of the black mark" "blood fire death" and "hammerheart."

Ulver "Bergtatt" and "Kveldssanger" for all that folky acoustic lushness.
 
I agree with Dreadful especially get your hands on a copy of Hammerheart. "One Rode To Asa Bay" is an all time classic. You can see how Bathory influenced not only Swedish bands like Opeth, In Flames and the like but the second wave of Norwegian black metal as well.
If you haven't heard any Celtic Frost try To Mega Therion (Opeth did a cover of "Circle of the Tyrant" on MAYH).

Yeah having heard their other early stuff (Blessed, Covenant) I think Dave's vocals are at their most evil on Altars, before he went kinda cookie. Also the production makes you feel like you're at a gig and they're blasting away:flame:
