I'm not much of an opera fan, but I do enjoy some classical vocal works such as Stravinsky's 'Les Noces' and his version of 'Mass'. Some Mahler vocal stuff is good as well, such as 'Kindertotenleider'.
 
Zander - Deutsche Grammophone and RCA Red Seal are both highly reputable labels with quality recordings.

and the Tallis Scholars are a good vocal group to investigate
