Ceremonial Oath - Disposable Heroes (metallica)
Blind Guardian - Mr. Sandman (50's tune, dunno who. great cover!)
Blind Guardian - Surfin' USA (beach boys - u gotta love a metal band that covers the beach boys!)
Shadows Fall - Welcome To The Machine (pink floyd)
Iced Earth - The Number Of The Beast (iron maiden)
Exhorder - Into The Void (black sabbath)
His Infernal Majesty - Wicked Game (chris issak - very interesting cover, actually pretty cool)
Pantera - Planet Caravan (black sabbath - im not a big pantera fan, but its a damn good cover)

Megadeth - Paranoid (the twin guitar solo is mind blowing)

Slayer does an awesome cover of a famous Iron Butterfly song, can't remember the name right now

It's not a cover but i like Mechanix from Megadeth, its the same song as Metallica's The Four Horsemen but they stole it from Dave Mustane after they kicked him out.
 
I second Alien Ant Farm. That is just one of the fucking best covers ever, no joke. It's just so hilarious.

To contrast, every song off Tribute To Carcass - Requiems Of Revulsion is pretty much horrible.

I cannot believe noone has mentioned Life of Agony's "Don't You (forget about me)" (Simple Minds). Damn I love this track!!!!

Some other enjoyable songs are In Flames' cover of Depeche Mode's "Everything Counts", Graveworm's cover of Pet Shop Boys' "It's a Sin" and The Sins of thy Beloved's cover of Metallica's "The Thing that Should Not Be".
