My favorite just might be Wojtek Lisicki from Lost Horizon, Luciferion, Against the Plagues
He has a great signature style/sound. love it!

I also really like Andre from Blind Guardian, love the way he double picks through certain sections.

Karl Sanders also has a unique style. lots of sweeps and his bends are top notch.

I have to second Andre. He's never flashy, but always solos with the overall song in mind.

Akerfeldt has a great mix of blues and melody in his soloes, got a really recognisable sound too.

Petrucci is probably the best mix of shred and melody around in my opinion.
