The fake-live cover Type O Negative did at 2bpm of Black Sabbath's Paranoid because it always makes me crack up.

Another Type O song, the cover of Summer Breeze by Seals and Crofts because of the sheer satire value of it.

Tori Amos's cover of Raining Blood because it is eerie and dark as anything.

and maybe a few others, but I generally don't care for cover songs. I dislike about 99% of cover songs in black metal because they're always Mayhem, Darkthrone, Burzum. Deathcrush and Transilvanian Hunger have been covered how many times?
