Guitar finger tapping has been around for a while, as Rolando says, at least the 50s. It was used primarily in Jazz, as far as I can tell. Al De Miola does the odd tap on his early records, which came about before EVH. (For my money, anything Al did before EVH made it big was still far more impressive than anything EVH could do technically, but I digress).
The Chapman stick was invented in the early 70s, being created by Ed Chapman for the sole purpose of two handed tapping with multiple fingers. Supposedly Paganini and other composers used tapping on violins and other stringer instruments over a century ago as well.
