You could download audacity and simply record audio without having to download the video as well.

No problem. Just adjust the volume levels in the program so the wav form doesn't clip or sound like shit.

The youtube vids are in a FLV format. And of course your not going to get the best quality from youtube, but I've noticed it's gotten a little better. And somtimes the download sites give you a choice for MP4 so that you don't have to convert them.
Anyhow this is what I use to down load most video's. Download the best quality if it's available.

You just copy the URL of the youtube video (or Google or other sites the site supports) paste it in the bar, and click on the best quality of the download that shows up. If it's old it may give you just one low quality. That will be an unconverted FLV file.
I have a Zune, So if the low quility is all I can get my hands on I use a psp converter to convert. Then my zune software will do the rest. The psp converter is free.
This should be good to convert the flv file for anything you have, or just for watching on the PC I'm sure.
