A real underdog DVD is "As the hordes stood as one" from Ancient Rites. Not the big and expensive production like the most you´ve mention have, but really worth seeing. The new Rammstein DVD will be killer also, if someone got the extended edition of their last album you´ll know what I mean.

Testament's "Live in London" (even though DiGiorgio isn't on it, it's still good)
Opeth's "Lamentations: Live at Shepard's Bush Empire" (the documentary is nice)

Although they're not metal - or even rock, for that matter - this is a band that i can see every metalhead absolutely loving.
They're probably more talented that Maiden - Priest - Accept - Blackmore - Opeth, etc, combined. And that's not an empty boast.
