Acoustic Passages

Agalloch - The Mantle and Ulver - Bergtatt would easily be the best, though you could go for some of the Opeth worship bands that get closer but sound kinda lame.

they might not have alot of acoustic passages but this is probably what you are looking for. Start with their new one "The Fall of Icons". Also, Agalloch of course.
 
I've already listened to everything Agalloch have put out, as well as Bergtatt (and their next two releases!). I will give the rest a try. Thanks.

edit: At the Gates really don't fit the criteria I'm looking for... but for what it's worth, their first two albums are quite good.
 
Although not exactly what you are looking for these still might be interesting for you:

Love History - cheesy name, excellent music! Only their debut "Galileo, Figaro, Magnifico" slightly fits your description.

Dornenreich - their album Hexenwind might be to your liking.



Green Carnation - especially their debut "Journey to the End of the Night"

Drawn - they sadly disbanded after their first full length but they released one hell of an EP and an amazing album.

Haggard - might be too classical orientated to you...

Nocte Obducta - A rather uptempo band but their latest album "Sequenzen einer Wanderung" is something you might like...

Noekk - a strange and very 70's orientated prog metal band. Very cool music.
