I haven't heard the newest Darkthrone, but even on F.O.A.D., I thought it was good (although Transilvanian Hunger and Sardonic Wrath are infinitely better). I don't usually say this, but if you hated it, you more than likely were listening to it in the wrong mindset, and missed the point of it entirely.
And yes, the low-fidelity production (not "shitty" production, as it fit's the band's sound) is one of Darkthrone's key characteristics, so you will see it more as you check out their discography; it's basically a big "fuck you" to all the overproduced, glossy-sounding metal that you'll find in the mainstream. It's part of what makes them so good, IMO.
