Go with Below the Lights first, and then Isa, Runn or Vertebrae. If you like these, then try Vikinglgr Veldi and Frost for their older sound. And if you like all, fuck get them all, man.

Vikingligr Veldi and Hordanes Land. Just pick up the reissue with both combined (thankfully on separate discs, the way reissues should be done).
 
vikingligr veldi or eld for the older, better stuff. of the newer stuff, go for monumension or ruun
 
Eld is kind of shit tbh iirc. I went back and tried to listen to it again to confirm my opinion but I couldn't even get past the second song. I would say start with Vikingligr Veldi and Frost. Then maybe move on to their demo material and their split with Emperor.
 
Below the Lights was probably the last Enslaved album I enjoyed as a whole...granted I haven't heard the latest

that being said, Vikingligr Veldi and Frost are both excellent records
 
Blodhemn is excellent and my favourite from Enslaved... it's brutal, epic, the song lengths and structures are perfect and the sound is pretty good. Eit Auga Til Mimir must be one of the best Viking/Black songs ever...I always found myself headbanging and singing the clean vocals at the chorus.

After hearing a lot to Vertebrae, I think it's a great album to start with Enslaved too, which it's not their best but as an album is pretty solid.
