My personal favorite has to be Fredrick Nordstrom/Studio Fredman. But honorable mention to Peter Tagtgren/The Abyss Studios, Fleming Rasmussen, Scott Burns, etc.
Kit Woolven is oft overlooked - but he did an awesome job with Cathedral. I don't think Andy Sneap is a defiler of metal - though the modern trend for "in your face" ultra beefy production can get in the way of the actual music i.m.o.
There's something to be said for the old fashioned analogue "dry" sounding production of, say, Witchfinder General.
But yeah, anything that Sunlight put out was generally great.
