It doesn't take that long to write, tbh. If you sit around jamming all day and you're as talented as Jari it probably takes one or two months tops, and many bands write their albums much faster.

Production. There are over 200 tracks per song. This is absolutely fucking ridiculous, by the way; even with a full orchestra, keys, ambient tracks, and the band itself with layered guitars and vocals it's hard to see needing more than 50 tracks. 200 is so fucking insane I thought it was a typo at first.
