How can I achieve these effects?

3:10 just sounds like a tapestop effect, dblue glitch is a free vst that does this well

The second one just sounds like a reverse cymbal, guitars and vocal swell all together. You should check out the Joey Sturgis forum on this site, it's going to be more geared towards these types of things seeing as how he produced, engineered, mixed and mastered some albums from this band. The first one sounds to me like using the whammy bar and diving it down, but knowing it's a Joey Sturgis mix it might be a plugin like mention above. The other is just everything (guitar/bass strum, kick and cymbals, and vocals) reversed. What you can do for vocals on that part is print the first word with a lot of reverb on it, then reverse the printed vocal take. It makes that weird swelling sound like that from the reversed reverb tail. Cooler than just a reversed vocal with reverb after.
