anyone good at this? I've tried quite a few times and I can get it sorta close to the restaurants but not really, I can get quite that rich depth, nor the ridiculous thickness of the curries they can achieve.

right, use a fuck load of oil because thats what they do in the restaurants. (vegetable oil - not olive oil.. olive oil if not heated to the right temperature 1st it creates a terrible taste)
if you want to make it real thick use corn flower. blend around maybe 2 - 3 heaped spoons in a glass of cold water and add it half way through cooking. rice powder can also be used, ar powered spuds. they will all help thicken it up. and make sure you cook it seriously slow, otherwise it becomes very runny.
also, don't add your meat too early, otherwise it will break up when your cooking and stirring, pre-boil example your chicken and add it half way through your curry's cooking session
and be sure to mic up the pot with a decent sm57 to catch the mid range frequencies of the pot's cooking process. compress accordingly

i was fuckin owned, i lost control of my face and legs. Even Adam D couldnt manage it. Me and D actually went head to head on curry heat, we did 10 phals at 10 different restaurants in 14 days. One of the worst being the Mogul in Nottingham which saw myself, scott atkins and Adam in a vicious battle of heat. Curry Hell was a whole new beast tho.

indian food is awesome, i dont think it really has the same reputation in america as it does here.
