I watched the video on the website, and it doesn't look like he is going to spend any time worrying about what he wants to specialize in. They stick the students right into a restaurant atmosphere where they have to study that night's entire menu, get the recipes right, calculate how much to make of each item based on that night's reservations, decorate the plate so it looks like a work of art (and therefore inedible), and after all that they get to scrub the fucking kitchen to the strictest health standards.

I admire JD for what he's doing. It takes balls to enter into any Boot Camp atmosphere, no matter what the chosen career. And from what I saw of that video, it's not unlike Boot Camp.

@Gonzo, I am going to the New England Culinary Institute NECI ... hehehe never heard of the Arizona one

@Wyvern, Interesting question ... More than one answer ... I have no real Idea at the moment, what I am going to do when I graduate :loco: ... but the school is going to give me a well rounded education in all Culinary Arts and some Baking too, but on top oh that I have outside the classroom stuff I have to do ... What I mean is I have to get a physical evaluation to show where I am at phyically, then I have to set goals to improve my self in that way ... hahaha so I will be doing some rigorous physical training too. its a total package education, so man I dont know what I am going to specialise in yet, I still have get used to being there :D

Thanks! again you translate my gibberish into readable text :loco: .... its gonna be hard! even with my experince its gonna be hard! cause I will have to just forget alot of what I know because it is incorrect, but that is why I am going there for the discipline. I want the Boot Camp, Nonstop action, controlled chaos all in one thing ... but they all want you to suceed and their energy is contagous :worship:

That sounds really cool. Baking? That's some fun stuff there. That's basically how I paid the bills while I was going to school. Hamburger buns, bread, dinner rolls and then pies after that. I made some really kick ass pies in my day. Everything scratch, of course. To this day I am required to make the pies for my family's Thanksgiving dinner. :lol:

The physical part is to get you into a routine so that you can burn off all those extra taste testing calories, right? :heh:

You're gonna do great, man. I know it. :kickass:

I'm glad you like baking! :loco: I'm not a big fan of it myself its a pain in the ass! ... though at that PP dinner I was talking about ... You just signed up to make desert pal! :heh:

The physical part is way more than just that ... they want you to be physically able to withstand being on your feet and on the go for 10 to 12 hours a day, six days of the week ... I myself am going to work on being a bit less scrawny, and maaaaaaaaaaaaaaaaaaybe quit smoking ... it would be worth a credit if I did it, .... oh yeah one other thing ... they have a whole program dedicated to Baking and Pastry .. I bet you would like that actually ... its some fancy shit that they do ... well it is atleast once they get to that point ... hahah ok there goes the ADD! all done now!

You should quit smoking. Take it from someone who's been at that nasty habit for far too long. :erk: You'll do it when you're ready to and someone else telling you that you ought to usually doesn't help matters.

Yeah, I could get into that baking program. The stuff I did was pretty simple but I did manage to handle a pastry bag fairly well.
