come down to germany and we will go to some beergardens ... but my area is not a real sauerkraut area

when a pig is just freshed killed "butcherd" the people use the warm meat to make

bloodsausage
leversausage
"bratwurst"
and cooked very fat meat
together with sauerkraut, mashed or cooked potatos
and as a entree they cook a soupp (so called sausage soup) with a all the meat which is over and there is no use of it.
the important think is that this meal will be served right after the pig has died!
real fresh!
