How would you guys go about this? surely recording 6 tracks of guitars would make for a slightly choked sound and could potentially be shitty as hell without super tight playing

Just base it on what they're playing.
Most likely get 2 of the guitarists to do one track each and the more important part/player to get to double his parts.

Record 3 rhythm guitars and Pan them left, right and center. Have the center one with less low end than the other two so the bass still has room.

The center only needs to be heard when it plays distinctly different part from other guitars (octaves etc...), when its playing the same rhythm section as the other guitars you can have it at lower volumes or muted.

You can bring up the volume to beef up parts like choruses.

Then record you're leads and harmonies and treat them as usual.

Edit:
You can also make slight cuts of -1 or 2 db at somewhere between 1000hz and 2000hz in the left and right guitars and raise the center guitar 1 or 2 db in the same place to give it presence.
