Ther is actually in the market a plug in that trasform a guitar in a sitar?

If you need it just for a recording, maybe you can try with samples or VST instruments?

Also there are a lot of free soundfonts around so if you have any kind of software sampler, google a bit.

As far as guitar playing goes, you can make some sitar sounds by playing in a specific way, by using one string on a guitar as a drone, using a lot of open strings and playing with a lot of short and fast string bends. Eric Johnson plays some stuff like that.
