I just cooked The perfect entrecote....
Yeah, i know, they keep telling you it can't be done at home like they do it in your favorite restaurant. BUT I DID IT! In your face Block House!

Cooking a good steak isn't too hard in my experience. Good cut of beef, minimal seasoning, only flipping once, not fucking with it too much, and letting it rest for 3-5 min or so after cooking, etc. etc.

I made steak au poivre the other night and it was tits!

Yeah, room temperature steak, 2 minutes from each side in a hot pan with just a tiny bit of olive oil. No forks etc, then let it rest for like 7 minutes in the oven at 70 degr Celsius. Just a bit of black pepper (freshly ground) and salt, then some garlic butter on top of it.served with "Kroketten"

Two minutes? You like your steak crying, eh? lolol. I'm more of a medium-rare, on the verge of medium guy myself.

I'm a big fan of skirt steak too. Not sure what they would call it in Germany. Close to flank steak. That kind of meat can be seasoned and marinated liberally, overnight sometimes. Great for tacos, carne asada, etc.

Shit, what is that Cuban seasoning called by Goya. Mojo or something? Good shit. Citrusy, garlicy, works great for skirt steak.

Thankfully we have an awesome Swiss/German owned butcher in town that has been here since the 50's. The freshest beef possible, homemade sausages, DROOOOOL.

once cooked a really good one, wouldn't say it was perfect though.
But hell, I also eat it raw if you don't want to cook it for me :lol:
 
My parents have a little piece of land around here with a fucking great grill
and I grilled a steak there once, got the meat from a good friend, he does
an apprenticeship atm at a restraunt with a michellin star, so he gets pretty
awesome meat.
I never ate something better, I felt like all the feelings that were described
when all the guys at "how I met your mother" ate the best burger of NY.

That's the one thing I miss about living in LA...Carne Asada! I don't know what's wrong with the mexicans here in vancouver, but I havn't had any decent socal/mexican food since I left. Even the super trendy top end Mexican places suck balls. It's the "whitest" mexican food ever.

Back on topic, I love cooking steak. Generally I do quick sear and finish it to medium rare in the oven, or just grill it on the BBQ.

Its always pretty expensive, but vancouver has a killer meat shop on granville island where you can get absolutely amazing aged steaks. You'll pay out the ass for it, but it's always worth it.

I find the mistake most people make cooking steaks is over seasoning. All these stupid steak rubs and spices are just lame. Little salt, little pepper that's it.

I occasionally do a soy sauce/Worcestershire marinade for overnight, but that's only with skirt/flank steak...
 
The only thing aside from a great cut of beef that is required to cook a great steak at home is a grill capable of providing high enough heat. High heat, great cut of meat with decent marbling (a real steak is always, and I mean always bone-on - none of this trimmed strip steak shit) , never close the top of the grill, a few minutes per side, never use a fork to flip, always use tongs, done!

Agreed.
You should enhance the taste of the meat instead of masking it.
On the other hand, it never hurts to have some marinated meat or something as a variation. ;)

Damnit.. now im hungry! :lol:
 
See - I'm a bit on the side of believing a truly great steak requires no seasoning (or at the very least very little seasoning). Just a good marble cut and a nice sear - melt in your mouth goodness.

Kind of the same here, but just a little bit of salt and white pepper just makes it taste allot more without really making it taste that different. :)
