The Perfect steak

Damn guys, I'm sitting here at work for 12 hours already and all that I've eaten is two fucking hot dogs. When I think about that perfect steak, I want to burn that venue down. :)
 
There is a hack for Outback steaks.

Outback Steak Marinade Recipe
This tastes just like the Outback Steakhouse Steak Marinade. Delicious!

Outback Steakhouse Steak Marinade Recipe- Makes enough for 1-2 pounds of steak

c. beer or ale
2 t. brown sugar
1/2 t. seasoned salt
1/4 t. each- black pepper and MSG

Let the steak marinate in the beer for at least an hour in the refrigerator.

Mix the dry ingredients together well.

After marinating, sprinkle the dry mix over the steak. Rub it all over the steak. Let the steak sit in the refrigerator another thirty minutes.

Put a pat of butter on the grill. When it's very hot, add the steak. Cook to desired doneness.

Grilling tip: When grilling steaks, they will be much better if you let them come to room temperature
first before grilling.




Here is another version:

1. Mix together the following spices:

6 teaspoons of Seasoning Salt
4 teaspoons of Paprika
2 teaspoons of Flesh Ground Black Pepper
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon cayenne pepper
½ teaspoon turmeric
½ teaspoon of coriander
2. Thoroughly coat and rub the spice mixture into both sides of the steak and let the dry rub marinate on the steaks for at least a ½ hour.

3. Cook steaks on medium high heat to your desired level of doneness. Turn steaks once, taking care not to pierce the steak.

4. Remove steaks from the heat and let the meat rest for 5 - 10 minutes.
 
If you haven't tried it, and you can get it (dunno how available it is outside of Aus), give Kangaroo steak a try. It's got a bit of a different flavour, but a LOT more flavour than a beef steak (which, tbh, most of the flavour is from the fat and spices). It tastes kinda like some meatballs my mum used to make with a whole bunch of veges mashed in, but it's just the meat. It's also super lean, very little fat, if you're into that. It's not 'better' than a beef steak per se, but if you have steak often (we BBQ at least once a week), some variety is nice.

now a bit less serious:
I just bought 1,2kg well aged beef filet, won't grill it as a normal steak,
gonna fry it on all sides and than put in the oven for 3 hours at 80°C,
until it's almost medium rare, just a bit salt and fresh pepper on the outside,
than I gonna put it into filo pastry (not exactly filo, but I don't know the
correct English term) and put it for 15 minutes into the oven at 180° so
the pastry get's a nice color, bought bones and vegetables to do a nice
sauce.
