To answer the inital question though, it's simple: What is sidechaining? It's a way to turn down shit in a track you don't want to hear.

Surely that's a use of side-chaining rather than what it is?

The way I'd exaplin it is that side-chainging is using one audio source to control parameters in another - for example, using the peaks on the kick drum to trigger ducking on a bass, or using a cloned tom track to open a gate on the original.
