I actually like to boil or steam red (irish) potatoes then prepatre them like baked potatoes. They aren't as dry and have more flavor than russets.
As far as sour cream.... Stoganoff !!!! I'll even devour up the Hamburger Helper Stroganoff till I can't move from the couch for an hour.
