heirloom tomatoes are varieties that have been preserved and not inter-mingled throughout the ages. that means their appearance is usually not as uniform as your average mass-bred tomato, but they have much more subtle flavor and different textures. there are heirloom varities of most every vegetables.
 
interesting. the heirloom tomatoes at whole foods look like SHIT, though; i think i prefer progress in some cases?

tomatoes were originally whitish and woody and flavorless, so i very much encourage their human-shepherded evolution.

well, they have most defined taste, as in they don't just taste like generic "tomatoes" but rather vary from type to type. some are more acidic, some are sweeter, etc etc.

whole foods charges way too much for em though. it's already probably too late in the season, but the farmer's market is the place to get em.
