I have to mention Kalmah & Norther too... Both finnish bands; like CoB... Kalmah are more agressive, but yet melodic in a better way... Norther are more fantasy inspired, and I think that fits this genre perfect... Give them both a try...

You should definitely check out FAERGHAIL. Specifically the 2000 release album "Where Angels Dwell No More". A great little album with excellent production. There's mp3's from this album here http://www.faerghail.net/main.htm .
