Raccoons carry rabies...I would stay away. I've had both rabbit and squirrel and I prefer rabbit. It's like a really tasty chicken, especially when served in it's own cooking juice with mashed 'taters. Squirrel is better mixed with other things rather than eating it as a portion of the meal. Deer is quite good if it's cooked right, and if you're eating the right parts. It also depends on how it was killed. If it was running when it was shot, the meat may not be as good.
Moose is pretty damn good...just like steak, only a little game-y.
Alligator is THE BEST...the tail at least. Great with Hollandaise sauce.
