I've been thinking about getting one of their CD's for a while now, so which one would be the best?

I think they peaked with 'Mandylion' and 'Nighttime Birds'. Those are my two faves, so obviously, I'd recommend them.
I like their new stuff too, but it's drastically different. They've basically gotten away from any kind of metal sound. But hey, there's nothing wrong with change.

Tori Amos kicks ass, particularly Under The Pink.

My favorite The Gathering albums are Mandylion and If_Then_Else.

@AllWithinMyMonster: I like Tori Amos (her "Saint & Sinner" live-bootleg from 1996 is my favourite album), but I don´t think her style has much to do with The Gathering/Anneke van Giersbergen.
