Do you guys know any bands that mix great death metal with acoustic work? I love Opeth and want to hear more.

Opeth's heavy bits aren't really death metal though.
Orphaned Land aren't much more death metal, but they do mix acoustic and heavy parts quite a bit and also are awesome. Check out Mabool.
Nile often throw in acoustic parts on some of their epics.
In Flames used to incorporate a lot of acoustic parts, especially on their first demo, which you can find online.

Edge of Sanity ~crimson, similiar to Opeth, but pure DM on all levels. Mikael Akerfelt has some guest vocal parts on this album along with a solo. Older DM releases have some acoustic parts just not many and are probably not what you're looking for.

Yeah, never could get into doom metal metal much. its too much of the same. I have heard the Edge of Sanity Crimson, which is a wonderful album/long song. Thanks guys, if you think of any more let me know.
