I'm just gonna go outside of the Rock genre and say Louis Armstrong, Debussy, and Loreena McKennet (spelling?).
As for rock stuff that's not metal or wasn't a real root of metal... I like Howie Day for some reason (expecting flames on that one), Radiohead, Marcy Playground, and evne though he wasn't really a player of original pieces, VICTOR BORGE!
