Took me a while to figure this out this morning, so I thought I'd post how I did it in case anyone else is curious.
This is assuming you have a dual output nVidia card, and onboard graphics.
Step 1- Load your bios, go to your Northbridge screen. Change it to PIC/IGA (Inbuilt Graphics Adapter)
Step 2- Hook your third screen into your onboard VGA plug. Start your pc.
Step 3- Go to Screen Resolution, and bang, you have a third monitor.
So easy once your bios is right!!
