i used to record guitar out of a Peavey studio 112 via the clayman method with my ibanez RG (passive pickups) and i used to get an alright passable sound
but my guitarist has just gotten a Crate head and cab for his christmas/bday present
ive tried recording it but i keep getting horrible results compared to the old peavey
there is a serious lack of "middle" sound from the amp

this clip is quadtracked and has no bass

You probably just need to work on the mic placement a bit more. It sounds like the mics were phasing the wrong frequecies out, ie: the mids instead of the highs which would give the smoothness of the 57V method.
 
Sounds a lot like a Crate to me, you could try and use less gain on the rhythm channel and dial in less treble too. Try going back to just double tracking until you get a sound you are happy with and work on building up more tracks after.
