I've been playing with Waves PAZ lately, and everything I run through it shows some antiphase, even a number of commercial recordings. Is this a concern?

i would recommend using izotopes ozone for checking real time phase
it will show you -1 0 1+
alone with a diamond scope for visual representation
it also lets you listen in mono, invert l or r, and switch left with right

No not at all....There is no way to elminate phase on most live recordings. The trick is to make it 1) not have a negative effect 2) work for you.
