I think I read somehwere that recording guitars in Mono was better because you squish all that sound into one channnel. You guys heard this? Thoughts?

If you have a mono source, it shouldn't make a difference - a mono signal rendered in stereo is just a slightly quieter mono track on the left and a slightly quieter mono track on the right. If you have multiple sources, practice safe mixing and keep them separate. If you have a stereo source (not likely, for guitars) then record it appropriately in stereo.

there's no point in record a guitar in stereo if you don't have a delay, reverb, or something going trough a stereo amp or two amps.
