I know what some of these are. Zarb and Dumbak are pretty much the same thing. They are Persian percussion instruments (those names are Persian), but they are also used in Arabic folk music. They sound ok, but most of times they sound stupid. In the folk music, I mean. Check the intro to the song Like Fire To Water...the percussion instrument used there is either Zarb or Dumbak (as I said, they are two different names for the same instrument, from what I know). I love that intro!
You guys should have used Daf. That's one hell of a percussion instrument! It's purely Persian and sounds a lot more majestic than Zarb or Dumbak. It's Sufi's main musical instrument in their rituals (known as Sema). I guess you already knew this though ;)
I've always thought of mixing its sound with metal riffings and rhythms.
