Duck is excellent, but IMO if a person doesn't know how
to make it, it can be NASTY dou to the amounts of fat
this meat has... sometimes when you go to a chinese place
for example, they leave all the fat on, so you get pieces that are like
[] this thick of meat and [........] this thick of fat attached to them...
the trick is to find a good place that cooks the meat WITH the fat
but cuts it off right before serving...
the best duck I've ever had was ith my parents in China Town NYC...
