I've always found Opeth and Dream Theater lyrics to be interesting and well written. Death's later lyrics are sort of "Philosophical" and generally pretty cool to read.

Demilich has some really abstract/cryptic lyrics. An example would be:

I also think that some of Metallica's lyrics are pretty cool. My favorite is the song "Master of Puppets". I think it's about how a drug addiction will destroy you:

Finally, I think Extol has some excellent lyrics if you don't mind that they're a "Christian" band.
