Played most of their catalogue over the last two days, and I have to say that the solo on the song Practice What You Preach is the best one laid down.

The best live solo was Skolnick's 'Burnt Offerings' at TOTT -- I could swear I was listening to the CD, he nailed it note-for-note...

I haven't heard all of Testament's songs, but I think the intro to Eerie Inhabitants is really fucking intense... I love Return to Serenity's solo a lot too. Troubled Dreams is another really good one. Can't forget Signs of Chaos either, tho.
 
I agree with TL there are so many great solos that it is hard to list them !
 
Just about every Testament lead (be it Al, James or Eric) is fucking amazing, so I'll just list a few that haven't been named in this thread yet:

practice what you preach,return to serenity,trail of tears,souls of black,over the wall,the new order,musical death(a dirge),eerie inhabitants,hypnosis,the preacher,the legacy,any and all skolnick leads are absolutely amazing he is truly missed in Testament from me.
