So I'm finally gonna man up and start recording real drums for hardcore and metal, what drum kit kits would you guys recommend?

At the moment I'm looking at a couple different packages from Audix, AKG and Samson

Audix - http://www.dv247.com/microphones/audix-fusion-7-drum-mic-package--66539

AKG - http://www.dv247.com/microphones/akg-rhythm-pack-drum-microphone-pack--62138

Samson - http://www.dv247.com/microphones/samson-8kit-8-piece-drum-mic-set--36331

Would really appreciate some advice if you guys get a chance!

Get used mics. Audix D6, Shure SM57s, a pair of decent SDCs for overheads. You'll be much better off in the long run, because even if you spend a bit more, if you ever need to sell the mics you'll get a LOT more back.

check out es57's by GLS there sm57 clones and there damn good get like 5 of them!
and then check out the CAD m179's get two of those for overheads.
and then get a nady dm-90 for kick drum.

about $512
and imho better then any budget drum mic package.
