There's a difference in woods, for sure.
All my experience is in Maple and birch. I do, however, really want to get my hands on Tama's new Bubinga kit, but... $$$$$$$...
At any rate, birch is known for having a bit crisper attack, and a faster decay, and being a bit quieter than maple. Maple is a bit warmer, a bit louder, and more "standard".
I've owned both, I dig both, and you can make either kit do whatever with the proper technique, dynamics, and of course heads and stick combination.
Go with either, honestly. Birch gaining ground, and its certainly a bit cheaper... its more known for fusion these days, but, its all whatever, and all relative.
