Doesn't have to be any particular number of them...who are your favorites?

In no particular order:

Marty Friedman
Dave Mustaine
Warren Demartini (Toured with DIO last year on the Maiden tour)
James Hetfield (Not a big solo guy, but his rhythm skills are fucking awesome)
Dave Murray & Adrian Smith
K.K. Downing & Glen Tipton
Kerry King & Jeff Hanneman
Dave Mustaine
Kirk Hammet (up until his foot became permanently attached to a wah pedal)
Alex Skolnick
Chuck Shuldiner
Randy Rhodes
Jake E. Lee
Zakk Wylde (Dude is a monster)
Toni Iommi
Greg Rapaport (You GOTTA check his stuff out if you are a guitarist)

These are a lot of my favorites...but I'm sure I left out a bunch...

I've heard Gouldy and Demartini named as the guitarists that did that tour (and I was so far back I couldn't tell either) - but whoever it was, they SMOKED...

Jeff Waters
Tony Iommi
Zakk Wylde
Alex Skolnick

That's a helluva list, I'd swap Satriani for Vai and Gary Moor for Clapton tho' as I don't like those two that much.

If I'm not mistaken, DeMartini was a candidate for the job but Dio said that he didn't really fit in the band, therefore they called Goldy back for the whole tour.

My fave guitarists are (in no particular order):

Dave Mustaine
Jeff Loomis
Dave Murray
Adrian Smith
Michael Romeo
Alexi Laiho
Randy Rhoads
Kai Hansen
Zakk Wylde
Toni Iommi
Yngwie Malmsteen
My brother

Have to add

Roland Grapow
Bruno Ramos
David Gilmour
Miguel Roldan
Osvaldo Civile
Armando de Castro
Carlos de Castro

Wolf Hoffmann - hands down the most influential guitarist to me.
Yngwie - Yeah he's a prick and a one-trick pony but he does that one trick better than anyone else.
Jorn Viggo Lofstat - up and coming guitarist for Pagans Mind. Has a very 80's style
Vito Bratta - He was the king of the glam metal guitarists. What happened to this guy ? Great talent.
Mick Mars - technically deficient but is the most easily recognizable sound I know of
David Gilmour - not metal but deserves mentioning. Best clean soloist I can think of.
Viv Campbell - When he was with Dio, he just flat out smoked.
Donald "buck" Dharma - This guy has great feeling in his solos,
Hetfield - he sucks now, but what a rythm player he used to be.
Tom Keifer - best blues rock soloist I can think of
Bruce Kulick - despite being "stuck" in a band that relied on simplicity, this guy was one of the best soloists I have ever heard. Great player.
Misha Calvin - This guy can do anything with a guitar and is a good songwriter to boot.

Bryant

Schenker
Joe Satriani
Yngwie
Stevie Ray Vaughan
Billy Gibbons
Buddy Guy
Michael Romeo
George Lynch
Bruce Kulick
Kenny Wayne Shepherd
KK & Glen(JP)
Jon Schaffer
Mick Mars
Ritchie Blackmore
Adrian Vandenburg
Warren Di Martini(too good for a band like Ratt, I love the tone on Way Cool Jr.)
Dave Murray
Dave Mustaine
James Hetfield
Marty Friedman
Criss Oliva(R.I.P.)
Slash

70s Schenker and Alex Lifeson. I am not saying there have been no good guitarplayers after that time. but these are my favorites.

To each his own! I mean, Satriani and Moore kick ass too, but i dunno....those two "spoke" to me more.
