In Cubase (versions 4, 5 &6) you can send all tracks straight to a summing buss, then make a new track, and then choose the summing buss as input of the new track.
(so, that would be: 1) make x number of tracks, according to your needs; 2) make a summing buss and route all those tracks to that buss; 3) make a new track, and choose the summing buss as input; 4) hit 'record' on the new track. Done deal)

Usually it's like 3db up or down for either on/off axis, whichever sounds best at the moment.
Like Crille said it's all summed on aux-tracks in PT.*
