I'm getting all my recording gear setup and thinking about getting a midi keyboard to control soft synths/pianos/etc., but don't really know what to get. What do you guys recommend?

I'm about to pick up a M-Audio Axiom 49 or 61. It has semi-weighted keys and built-in drum pads, too.

I have an M-Audio Axiom 25, which is great for getting parts in, auditioning patches, etc. It's my go-to controller for almost everything.

If I feel like really going crazy on the keyboard, I have an old Yamaha KX88 MIDI controller keyboard from the 80s. Weighs about 80 lbs, has weighted keys, many people say it's the best 88 key MIDI controller of all time. It's connected to the back of the Axiom 25 via MIDI so that both keyboards are being sent over the same USB cable to my G5.

I've got an axiom 49. No complaints except that the keys really do feel like a $250 keyboard. They need to be worn in a little, they stick initially. Pads are excellent!! I would have preferred a 61 because of the range i like to play in without having to hit the octave button. No big deal really.
