I'll be having chinese fondue this weekend

to OP: you're not talking about hot-pot, are you? amazing stuff.

And if you're going to eat chinese food, Sichuan is the way to go. Worlds strongest food, or so I've heard. I'm in Chengdu, right in the middle of Sichuan, and hot damn some of the food is unbelievable.

plus, I'm taking chinese food/cooking classes, so I'm going to be figuring out how to get all those funky flavors they're able to make.

and

most american chinese food is ridiculous.

well it seems like the exact same here, so I'm guessing its mainly a Sichuan procedure then.... basically you have two you can dip into, and one is most likely the hottest one ever.

wow, I actually had it once without knowing its called "Chinese Fondou!"
It was with my parents in NYC, 2 years ago: at this AMAZING restaurant..
but that thing was our appetizer... they brought it to the table with bite size veggies and tiny pieces of duck... interesting.
It was actually VERY VERY good.
