But I think Watershed is amazing though.

I agree, gorgeous packaging. Music is great and quite ambitious (especially the obvious prog-rock nods), but I kinda prefer Lemuria/Sirius B and Secret of the Runes.

Well I liked Therion before but Gothic Kabbalah was the album that really made me get into them and explore further. So it's my favourite.
