@waz: don't know about wine, but I can help you with water. It's "nell'acqua", not "in l'acqua". "In l'acqua" just sounds stupid.

As for me and alcohol-related progression, I really wouldn't know. I have become, if anything, more intense, and more rich. A Cote du Rhone red. Chateau la Nerthe or something. When I started coming to this forum, I had the habit of drinking mostly white, but I probably looked and felt like... tequila-spiked beer.
