In Flames - The Jester's Dance (this is great!!!!!)
Emperor - The Wanderer

I recommend all of these albums.

Liquid Tension Experiment 1 and 2 - All of these guys are amazing. These songs range from anywhere from 4 to 18 minutes, and they never get boring.

Planet X - Universe. Derek Sherinian's finest work. Virgil Donati (drums) has the fastest feet I have ever heard

Spastic Ink - Ink Complete. It sounds like it got recorded on the inside of a Coke can, but it is amazing. Listen to YYZ from Rush and you'll basically get the sound.

Jordan Rudess - Feeding the Wheel. Trippy, technical stuff. JR is a gun.

Dream Theater (songs) - The Ytse Jam, Erotomania, Hell's Kitchen, Overture 1928, and last but not least, The Dance of Eternity. These will paralyze you with awe.

Terry Bozzio - ALL his solo work. I still can't believe it's all one guy. He can do so many crazy syncopated things with his hands and feet simultaniously. Very interesting.

Ulver: 50% of Kveldssanger
Morbid Angel: Desolate Ways, In Rememberance, Nar Mattaru, Melting, Dreaming, Disturbance in the Great Slumber, Hymn to a Gas Giant, Ascent Through the Spheres, Hymnos Rituales de Guerra, Trooper  , Kawazu
Morgion - Solinari, The Last Sunrise
Naglfar: A Departure in Solitude, Vittra (kinda)
Manowar: Achilles-Agony and Ecstacy in 8 Parts: Part 3?: Funeral March. (It's a 3 minute part of a 28 minute song, damnit. And it kicks ass)
Sculptured: Apollo Destroys, Apollo Creates
Agalloch: A Poem by Yeats (mostly)..., The Misshapen Steed
Amorphis: Karelia
Anathema: Black Orchid
Katatonia: Elohim Meth
Grey Skies Fallen: Spiral Dreams, Dawn
In Flames: Pallar Anders Visa
Moonspell: Lua D'Inverno
Theatre of Tragedy: Monotone
Tristitia: Sorrow, Burn the Witch, Adagio 1809, Gardenia, Lioness' Roar (This one's just marvelous)
Brutal Truth: Prey ( DON'T Get this one )
Alice in Chains: Whale & Wasp
Sepultura: Jasco, Inquisition Symphony, Clenched Fist
Lacuna Coil: Trance Awake, Un Fantasma Tra Moi
Voice of Destruction: Vir Zoe, Ring of Brodgar
Sinergy: Born Unto Fire and Passion, Pulsation
Arch Enemy: Vox Stellarum

That's all I can get without popping any CDs in.

i'm assuming these weren't mentioned yet

Apocalyptica - Cult (the entire album)
Enslaved - Froyas Smykke
Enslaved - Frost
Therion - Symphony of the Dead
Witchery - Bone Mill
Witchery - Hearse of the Pharaohs

Here are some excellent instrumentals, Opeth excluded:

Testament: "Musical Death (a Dirge)"

Death: "Cosmic Sea"
