Overheads / Phase / HUGE Weakness... Advice needed

Tried 2 AT2020's Today and the results are MUCH smoother. Its definitely those Sterlings. Time to sell them off and buy some decent quality overheads.

Im looking for something in the $500 (for the pair) range.

Pair of NT5's maybe?
 
Don't rule out LDC's as well.
I know people were raving about those CAD M179 mics a while back for use with drums.

Try a lot of different stuff and find what works best in your situation.

I tried some NT5's once and they were pretty smooth from what I could tell. I got two MXL 603s' for $75 on ebay. Super cheap and I've used them as overheads since like 2004 or something. I use them on toms as well since I don't have dedicated tom mics, i have four of them.

Yepp Oktava's are great. I recently went from Oktava's to Peluso cemc6. The peluso has a little bit better transient response and highend. But they are twice as expensive
 
I'm currently using Audix's Adx51's on overheads. Anyone else find them useful? I'm happy with the sound, but would love advice on better (same price range, if possible) mics.

I'm pretty sure that the problem you're having is a room issue (as in, the ceiling is too low or you placing your overhead right next to the wall/ceiling) I have had the same problems in the past where the overheads sound like dogshit. Find a better sounding room where the cymbals and snare can really breathe and arent sounding cluttered.
