Why does Orphaned Land switch to Latin for Building the Ark?

We like to be as multi cultural as we can, it is by the use of so many instruments and inspirations of so many music styles, and it continue to the use of many languages, we wanted to make somthing which will be gregorian and Building The Ark was perfect for it.
