In specific, anything similar to Therion. I enjoy a wide variety of orchestral instrumentation in the music as well, not just the typical violin/cello combination.

I've already started a thread like this, but oh well. I love symphonic metal.

I second Hollenthon (fucking great black symphonic metal)
Bishop of Hexen
Vesperian Sorrow
Obsidian Gate
Turisas (symphonic folk/viking metal)
Moonsorrow (symphonic folk metal)
Borknagar (not wholly symphonic... but very melodic and w/ keyboards)
Limbonic Art (In Abhorrence Dementia and Legacy of Evil)
Aborym (Generator)
I second Virgin Black (symphonic gothic metal)
Emperor (Anthems to the Welkin At Dusk)

Symphonic power metal:
Rhapsody of Fire
Nightwish
Thy Majestie
Kamelot
Avantasia

I'm actually still searching their catalogue. Aside from In Abhorrence Dementia, that's the album I've heard the most of. Still, parts of it sound very symphonic I thought (melodic at least, I guess).

Generally hard to find, but among other things check out Haggard and a new band called "Liva". Lacrimosa is good too, if you don't mind gothic metal.

Nice to find someone with similar tastes ^__^
